❄️ Every December during the Nobel Prize celebrations, the Nobel Banquet brings 1,300 guests to Stockholm City Hall.
🍽️ Anyone can try a Nobel dinner.
🧑🍳 We asked Filip Poon, Swedish chef and food creator to try Nobel menus from different eras and share his expert take on the taste of the times.
In 1936, luxury meant richness and abundance: false turtle soup – so fashionable it appeared four times that decade – followed by sea bass fillets, then hazel grouse breast with fried banana and Waldorf salad, and finally glace au four.
In 2024, the flavours tell a different story. Swedish ingredients, sustainability and careful sourcing define the plate: Östergötland goat cheese with lovage, Swedish beets and quince; chicken and legume quenelles with Gotland truffle; miso-glazed celeriac served with modern culture-porridge made from cut barley with wild and cultivated mushrooms; and a dessert built entirely around Swedish apples in multiple textures.🍎 A meal shaped by today’s values and ideas about food.
